Light of Leo’s Vegan Chocolate Chip Cookies (+mixtape #2)

Dreams of oatmeal, coconut, and chocolate cookies came true when I finished this recipe (all while keeping it 100% vegan!) Enjoy! INGREDIENTS: 1/3 cup peanut butter (I use organic) 2 tablespoons canola oil 1 cup sugar 1/3 cup almond milk (I use unsweetened regular) 1 cup flour 2 tablespoons applesauce 1 teaspoon vanilla extract 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup rolled oats 3/4 cup chocolate chunks 1/2 cup shredded coconut Optional but awesome: 1 tablespoon chia seeds DIRECTIONS: – Preheat oven to 425 degrees, lightly oil baking sheet, set aside -Whisk together the peanut butter, sugar, almond milk, canola oil, and vanilla extract until very smooth -Add in the remaining ingredients and combine thoroughly – Transfer in large spoonfuls onto the oiled baking sheet -Bake for 10 minutes, or just until golden brown -Let the cookies cool (I like to put mine in the fridge for about 5 minutes) then enjoy! PRO TIP: Put a scoop or two of coconut milk vanilla ice cream between two cookies for instant vegan heaven

In a Style Rut

In this day and age, what’s considered “trendy” is constantly changing. And, as I’ve mentioned in at least one previous post, so is my style. I tend to not stick with anything for long when it comes to what I wear, and once I get sick of a certain “look”, I tend to go a bit crazy. It plagues me with the ever-concerning question: What next? Obviously its never any fun leaving the house in something you’re not happy with wearing. Ever wake up late and only have 5 minutes to throw together an outfit before being gone for the whole day? It doesn’t feel good. (Or maybe I just care a little too much.) Obviously its not practical, cheap, or ethical to buy new clothes every time you get sick of your old ones, but you can do things to help you see these clothes differently. Pick-me-up Makeup

I tend to avoid most makeups just because I hate the way they look on my skin (I have very red skin and a bunch of freckles, and I’ve found that foundation just does not cooperate with it.) I’ve also found that mascaras and eyeliners tend to look a bit too harsh on my face, and they irritate my eyes a lot. Despite all of this, I still love to experiment with makeup products that I find fun, such as lipsticks and roll-on-glitters (like this one.) The mauve pink color is my favorite, naturally. I’m pretty sure I just about dropped dead when I first found it in Ulta. I’ve mostly grown to love my face the way it is (maybe with the exception of my eyebrows) but it’s always cheered me up to experiment with fun makeup.
